Douglas Fir Sorbet

Clear Creek Distillery in Portland, Oregon makes this lovely Eau de Vie of Douglas Fir. It is not for everyone, but I love the pine flavor in cocktails as well as this sorbet. I highly recommend it mixed with fresh squeezed grapefruit juice and a splash of Campari. K&L Wines usually carries it (I'd call to check first).

Douglas Fir Sorbet

2 cups water
¼ cup sugar
2-3 tablespoons Meyer lemon juice
1/4 cup Eau de Vie of Douglas Fir

In a medium saucepan, combine sugar and water. Bring to a boil; stirring occasionally until the sugar is melted. Remove from heat and let cool. Add the Eau de Vie of Douglas Fir. Add the lemon juice a tablespoon at a time, until you reach the desired flavor. Refrigerate until cold. Place the cold sorbet mixture into your ice cream maker and follow the manufacturer's instructions.
